Easy Family Dinners {Multicultural Meal Plan Mondays}

When I am on my A game I have a dinner meal plan for the week.  That is far and few these days.  With 3 small children I am all over the place most days.  Once, I was so organized. But now, I have to learn to go with the flow. The meal plan for my easy family dinners that I am sharing this week is one of my favorites because it is so easy and you cook one meal and it then becomes several more.  All in one almost for the week.  Quick and easy is what this mom likes.  Growing up with a multicultural background my dinner meal plan includes a little Cuban, Mexican, and Southern touch.
 

Monday- 

 
Beef Roast in crock pot with potatoes and carrots.  You can add multiple sides of your choosing if you wish.  We are usually good with just this.  Also you can add fresh potatoes and carrots this is just what I had this day.
 

 

Roast pictured is smaller than the one I usually buy when I plan to make multiple meals from it but this size for us still offers a few meals before its gone.  I have one child that does not eat meat except bacon and hot dogs. Crazy Right. So he usually eats grilled cheese or pbj with fruit.


Tuesday- 
 
leftover roast tacos.  We take the pulled roast and fill soft tortillas then add toppings we like ( cheese, lettuce, sour cream…) This goes great with a side of Mexican rice.  You can also add any other side dishes of your choosing. 

Wednesday- 
 
leftover pulled roast cooked in skillet.  Add a little olive oil to pan and sprinkle meat with garlic and onion powder (you can also use fresh garlic and onions) to meat.  I like mine cooked till crispy but you can just cook the oil out.  This goes great with white rice, black beans, yucca, and salad.
 
Thursday-  
 
Mini omelets with  the roast.  Follow recipe and just change out ham for roast.  This is great with fresh fruit cup and toast.
 
Baked Mini Omelets
 
Friday-  
 
Salad with diced ham.  If I make it all week preparing dinner, I like to have a super easy night like this with an easy salad.

    I love how many meals you got out of this roast! This is the kind of weekly meal plan I feel like I could actually do!
